The Concept of Our Alpine Cuisine

Our Alpine cuisine is a contemporary interpretation of alpine food culture — no folkloristic mountain kitsch, but a genuine engagement with what the Alpine region has to offer.

Vegetarian during the day
Breakfast and lunch are consistently vegetarian. In the evening, a meat dish is welcome — carefully selected, humanely raised, Swiss origin. Halving meat consumption is one of the biggest levers for CO₂ reduction.

Swiss Producers Only
The bread: a bakery that uses only Swiss products. The yoghurt: produced on the Eggberge. The cheese: from surrounding alpine farms. The wine: from Switzerland, two directly from Uri. We know our suppliers personally.

No À-la-carte
We cook seasonally, regionally, and fresh — this rules out long-term menu planning. A conscious choice to forgo À-la-carte as part of our efforts to avoid food waste. No deep fryer, no microwave.

Tavolata — dining together
All guests sit together at long tables. The food comes in large bowls — shared, communal, connecting. This is exactly where conversations happen that you can’t plan.

Organic where possible
We prefer organic quality wherever possible and economically justifiable. However, regionality takes priority over the organic label for us — a local producer without certification is preferable to a certified distant import.

Seasonal & fresh
What comes to the table is determined by the season — not a yearly menu. In spring wild garlic, in summer alpine cheese, in autumn mushrooms and wine, in winter root vegetables and preserves. That is true respect for food.

Full Board — from Breakfast to the Tavolata

Every overnight stay includes full board. No breakfast surcharge, no half-board compromise.

Breakfast 07:30–11:00

Vegetarian and regional breakfast buffet: fresh bread, local cheese, homemade Bircher muesli and granola, homemade spreads, coffee/tea and juices.

Lunch Buffet and Snacks 12:00–13:00

Vegetarian lunch buffet or optional packed lunch for day trips. Snack corner with dried fruits and nuts, biscuits, as well as coffee/tea and water available all day. Afternoon snack with cake bookable on request.

Tavolata in the Evening – Communal Table 18:30

In the evening, a meat dish is also on the menu. Three courses of Tavolata served at long tables, together, shared, connecting.

Honesty Bar

The self-service concept of the «Honesty Bar» promotes a relaxed experience. Various gins, local wines and aperitif drinks — here you’ll find everything for a cosy evening.

The yoghurt at breakfast comes from the farm next door — from the same Jersey cows you see on the way to the cable car. There are no shorter routes.

We source our cheese from the alpine farms of the region. Not because it’s cheaper — but because you can taste the difference and we know who made it.

Our bread comes from a bakery that uses exclusively Swiss raw materials — this is no longer a given today, but for us it is non-negotiable.

Swiss Wines — two directly from Uri
Our entire wine selection consists of Swiss wines. Two of them come directly from the canton of Uri — wine that originates from the same mountains in which it is enjoyed.

Breakfast eggs are supplied by our staff from their own chickens whenever possible. This is not meant as marketing — it is simply how things work here.
